This one-baking-dish recipe lends itself to many kinds of fish.
– 2 lbs. fresh or frozen salmon fillets
– 2 tablespoon olive oil
– ½ teaspoon dill
– ¼ teaspoon salt
– ¼ teaspoon pepper
– 1 can sliced pineapple (optional)
– ½ cup pineapple juice or water
– 1 onion
– 2 cups quartered new or sweet potatoes
– 2 cups baby carrots
Thaw salmon fillets if frozen. Preheat oven to 350° F. Coat bottom of large baking dish with olive oil. Place fillets in dish. Sprinkle with olive oil, dill, salt and pepper. Place pineapple chunks or slices on top of fish, if desired. Pour pineapple juice or water into bottom of dish. Surround fish with quartered onion, potatoes and baby carrots. Bake for approximately 30 minutes or until salmon is firm throughout. Serve with salad, rice, steamed vegetables, or bread if desired. Makes 4 servings.
